The information in the following review article was originally presented at the 1998 Meeting of the Association for Chemoreception Sciences in Sarasota, Florida (22–26 April). As Program Chair for this meeting, I invited Dr Bartoshuk to present her recent research findings on human taste perception in a special lecture. Her lecture was preceded by a series of related short papers on taste perception in humans. Presenting authors of the short papers were A. Drewnowski, S. Eylam, D. Ennis, B. Raudenbush and T. Radil. Abstracts from Dr Bartoshuk’s lecture and these short presentations were published in the October 1998 issue of Chemical Senses (vol. 23, pp. 547–548 and 588–590).
